Vegan cake with berries
Ingredients
For the sponge cake
- 10 tablespoons of whole grain flour
- 5 tablespoons of oats
- 2 tablespoons of baking soda or royal powder
- 6 tablespoons of sugar chew or stevia
- 2 tablespoons of oil
- Vanilla essence, cinnamon (to taste)
- 2 tablespoons of lemon zest
- Vegetable milk or water
- 1 mold for the oven with oil and flour
For the cream
- 1/2 cup of coconut oil
- 2 cups of organic flour
- 1 wooden ladle
- 1 liter of vegetable milk (preferably oatmeal that is creamy)
- Sugar mascabo to taste
For decoration
- Red fruits of your choice
- 2 tablespoons of coconut oil
- bitter cocoa
- grated coconut
Preparation
For the sponge cake
- Preheat the oven to 180º C
- Put butter and flour in a mold
- Put in a bowl all the ingredients for the cake and mix and beat for 5-10 min with blender
- Place the homogeneous semiliquid mixture in the mold 5) Bring to medium heat (150ºC) for 30-40 min (until cooked)
For the cream
- Melt coconut oil with sugar
- Heat the oil with the sugar and flour. Stir with wooden spoon
- Fry the oil with the sugar and the flour, until the boiling point
- Pour the vegetable milk. Continue stirring 4) The mixture will begin to thicken. When a thick mixture is obtained, remove from heat.
- Cut the cake into two halves, and fill with this cream
For decoration
- Melt coconut oil with cocoa and sugar
- When it begins to cool and this with a semi-liquid consistency pour over the top of the sponge cake
- Sprinkle grated coconut and red berries
