Vegan Banana Bread

This bread is very easy to make and is super nutritious

Take bananas, raisins, goji berries, almond flour and nuts and chia

It can be made with whole grain flour and for celiacs with rice flour or chickpeas

It is sweetened with honey or sugar.

Ingredients

  • 5 very ripe bananas (serve those with black skin)
  • 1 cup of almonds
  • 2 cups of nuts
  • 1 cup of rice flour or chickpeas, or whole grain
  • 1/2 cup honey or sugar mascabo
  • 3 tablespoons of chia seeds
  • 2 tablespoons of cinnamon

Preparation

First preheat the oven to 145º C

Place the almonds and nuts in a processor or blender until a flour is formed

In a bowl add the flour together with the soaked chia, cinnamon and honey. Stir until a homogeneous mixture forms. Add the raisins and Goji berries.

Step on the bananas and place them in the mixture. The mixture should be sticky. If you need liquid you can add water or vegetable milk

Place in a mold, previously place coconut oil or other vegetable oil

Bring to a minimum oven for 1 hour or until when placing a knife in the dough, it is dry.

It can be decorated with chestnut cream or nutella vegan and fruits
